Refurbishment and fit out of part of a derelict unit (formerly part of the old Camberwell Library) in the Camberwell Green Conservation Area to form a new Delicatessen, bottle shop, and meat bar for British Charcuterie supplier Cannon & Cannon; their first bricks and mortar venture. The project was completed on a tight schedule and with a limited budget using low cost materials: painted plywood flooring, ceramic tile linings, and screed countertops with mild steel edgings.
Space is provided for 30-40 covers and retail sales. A long counter with bar seating fills the centre of the room with additional space provided around wall-hung, steel-framed, teardrop-shaped tables by the shopfront and a bench seat for larger groups to the back of the unit. A steel-framed, refrigerated, meat-display cabinet sits at the front of the space with a glazed corner enabling the produce to be visible from the street. Two additional tables have been inserted into the original refurbished shopfront. The palette of materials has been kept simple to create a clean, understated space that allows the produce on display to be the focus. The primary elements of the interior are constructed from mild steel, with ceramic tile linings and steel edgings evoking the materiality of a butcher's shop. Counter and table-tops have a screed finish, poured on site and finished with wax to preserve the tonal variations and imperfections of the material. A steel and plywood stair connects to the lower floor where the space is divided into staff office spaces, storage, and a private tasting room. The existing fabric has been repaired and retained with areas of bare brickwork and plaster left ‘as found’ and ceiling joists exposed. New partitions stop short of the ceiling joists to differentiate old and new.
